The Palio del Chiaretto is the event that well combines all the food and wine and cultural history of Bardolino and that attracts thousands of visitors from all over Europe. The pleasant environment of the production area of the “Bardolino Chiaretto Doc” is that of the Gardesano Veronese territory covered with vineyards and olive trees. The vines that contribute to producing the Bardolino Chiaretto Doc are: Corvina Veronese 35-65%; Rondinella 10-40%; Molinara, Rossignola, Barbera, Sangiovese, Marzemino, Merlot, Cabernet Sauvignon alone or together.
How is Chiaretto produced? It is necessary to watch the must to separate it from the skin at the ideal moment of absorption of the aromas and color. The rosé vinification of red grapes by us is the result of local tradition and of the deep knowledge of the characteristics of our grapes. An accurate fermentation at a controlled temperature follows to maintain the characteristic aromas of the grapes. The “Bardolino Chiaretto Doc” sparkling wine with natural fermentation methods can be designated “Spumante Brut”, the first of its kind in Italy.
